I’m a huge nerd and I’m probably an even bigger foodie. It made my life yesterday when buzzfeed.com posted one of my food pics! I had to document it on here and get the recipe down.
Food has been a big hobby for the past 5 years or so, and especially since my diagnosis. It’s a great activity that is pretty controllable, timing is flexible, and it is a very good way to keep busy. You have no idea how much time you can spend looking up recipes on Pinterest and on Instagram too. Don’t get me started on the recipe ideas in my head from daydreaming of my travels (if only people could cook veggies like the Burmese!).
A quick explanation of the buzzfeed thing…
During the 4th of July goings on I was making Breakfast Sausages as they’re called in my fiancé’s family – his mom is actually who taught me the recipe. My sister was helping me out and suggested that we top some of them off with an egg wash and Trader Joe’s Everything But The Bagel Sesame Seasoning Blend (EBTB). Brilliant!
These little dogs are already unreal and delicious but with that seasoning they were out of this world! We had grand ideas of leaving some for leftovers and eating fish tacos for dinner, but instead all of us pigged out on these little pigs in a blanket. Last week @asis contacted me about using the photo for BuzzFeed. I figured why not because I’m not doing anything with it. Yesterday the post came out and there was my photo! They also called my sister a genius to which she told me she’s putting it on her resumé. So small in the big scheme of things but so exciting when those are exactly the articles that I get lost in! So long accounting I’m gonna be a professional pigs in a blanket photog! 🙂
Below is the recipe. Step #2 in the instructions is a bit rough but I’ll update with better pics when I make them next. If you give them a shot I hope you enjoy and let me know how it goes!
Ingredients:
- everything but the bagel seasoning (@ Trader Joe’s but there are other variations at a lot of other markets)
- 1 package of little sausages
- 2 packages of crescent rolls
- 1 egg white
- sliced, pickled jalapeños (optional)
Instructions:
- preheat the oven according to the instructions with the crescent rolls.
- grease a baking sheet (line with aluminum foil and grease that for quick cleanup).
- take one of the individual triangles for a crescent roll and cut it into 3 triangles. You want to keep the same length of the triangle to wrap around the sausages, but the triangles will be narrower than what comes straight out of the package. I use kitchen scissors and start at the narrow point making two cuts out from there to get my 3 triangles.
- place a sausage on the fat end of one of the triangles. top with a slice of jalapeño if you enjoy a bit of spiciness.
- roll the sausage (and jalapeño) towards the pointy end of the narrow triangle and place on the baking sheet. repeat until you have enough breakfast sausages.
- if you’d like to top with EBTB, then crack one egg white into a bowl (aka egg wash). coat the rolled up breakfast sausages with the egg wash and then sprinkle the seasoning on. TIP: a little goes a long way. The pic the site posted is actually a bit heavy for my liking so I’ll go lighter next time.
- bake according to the crescent roll instructions. it may take a little longer than the package suggests because of the sausages, but start there just to be sure. everyone’s ovens are different
One package of lil smokies uses up about all of the crescent rolls. That’s about 48 breakfast sausages in total once you’re done.
